A heartfelt homage to Chef/Owner Jean-Christophe (J-C) Poirier’s heritage, formative years in Quebec and early experience in renowned Montréal restaurants, St. Lawrence offers a marriage of classic French cuisine and the gastronomic identity and culture of Les Québécois.

Originally from Quebec, J-C has been a fixture on the Canadian culinary scene for more than 25 years. After voyaging west in 2004 and helming kitchens at a number of notable Vancouver restaurants he launched passion project St. Lawrence in 2017, where he indulges his razor-sharp focus, dedication to craft, and affinity for time-honoured traditions. Armed with classical training and skills earned working in local kitchens and Michelin-starred restaurants overseas, Ashley embarked on a longstanding, like-minded culinary collaboration with Head Chef J-C Poirier years ago. Today, Ashley leans on his mother’s French-Canadian heritage as inspiration in the creation of St. Lawrence’s signature fare.
After sharpening her management skills in a number of top rooms throughout Vancouver, Danielle found her ideal home commanding the front of house at St. Lawrence. Danielle choreographs each night’s service with the deft touch of a seasoned industry veteran and views the team and guests alike as extended family.
Yacine earned his bar degree in a number of top restaurants in Paris and London before putting down roots in Vancouver in 2008. At St. Lawrence, his genuine warmth, cocktail knowledge and dedication to showcasing French and Quebecois products provide a perfect complement to the restaurant’s cozy, homespun feel and authentic cuisine.
